Ingredients
1 carton of passata
1 tin chopped tomatoes
2 tablespoons of tomato puree
2 large cloves garlic, minced
Handful of fresh basil leaves, roughly torn/chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon vinegar any will do but red wine or balsamic preferred
1 teaspoon honey
Method
In a saucepan over a low heat, sauté the minced garlic until fragrant, add the tomato puree and cook for 1 minute.
Pour in the passata and chopped tomatoes, stirring to combine.
Add the chopped fresh basil, salt, pepper, vinegar, and honey to the sauce. Mix well.
Bring the sauce to a simmer, then reduce the heat to low. Let it cook uncovered for about 5-10 minutes, stirring occasionally.
Taste the sauce and adjust the seasoning if needed. If you prefer a smoother consistency, you can use an immersion blender to blend the sauce until it reaches your desired texture.
